Trail Coleslaw. I was inspired by the healthy SoCal lifestyle.  Healthy crunch with coleslaw. Never had anything like it, love it.

 

 

Ingredients:

  • 1 package/4 cups coleslaw mix (I used store bought pre packaged)

  • 3/4 cup trail mix (chocolate and raisins removed)

  • 1/2 cup mayonnaise

  • 1 tbsp chopped dried cranberries

  • 1 tbsp onion minced

  • 1 tbsp dijon mustard

  • 1 tbsp apple cider vinegar

  • 1 tbsp honey

  • salt and pepper to taste 

Method:

In a medium sized mixing bowl:

  • combine all the wet ingredients (mayo,mustard,vinegar,honey) and mix well

In a separate large mixing bowl:​

  • add the coleslaw mix

  • add the trail mix

  • add the onion

  • add the dried cranberries

  • mix/blend all the dry ingredients well

Add the wet ingredients to the dry​

  • Mix/blend all together well

  • cover and refrigerate for 1 hour
