Trail Coleslaw. I was inspired by the healthy SoCal lifestyle. Healthy crunch with coleslaw. Never had anything like it, love it.
Ingredients:

1 package/4 cups coleslaw mix (I used store bought pre packaged)

3/4 cup trail mix (chocolate and raisins removed)

1/2 cup mayonnaise

1 tbsp chopped dried cranberries

1 tbsp onion minced

1 tbsp dijon mustard
-
1 tbsp apple cider vinegar
-
1 tbsp honey
-
salt and pepper to taste
Method:
In a medium sized mixing bowl:
-
combine all the wet ingredients (mayo,mustard,vinegar,honey) and mix well
In a separate large mixing bowl:
-
add the coleslaw mix
-
add the trail mix
-
add the onion
-
add the dried cranberries
-
mix/blend all the dry ingredients well
Add the wet ingredients to the dry
-
Mix/blend all together well
-
cover and refrigerate for 1 hour
