Ingredients:

  • 2 Hatch or Poblano Peppers

  • 4 Mozzarella String Cheese Sticks

  • 1 tbsp olive oil

Pico de Gallo Ingredients:

  • 1 cup finely chopped cilantro

  • 1 tbsp finely chopped onion

  • 1 tbsp finely chopped jalapeno

  • 1 tbsp diced tomato

  • 1 tbsp lime juice

  • 1.5 tsp salt

  • 1 tsp lime zest

  • 1 tsp lemon zest

Method:

  • Slice open the pepper from stem to the tip

  • Slice across just below the stem

  • Remove the seeds and membrane

  • Use a pastry brush to baste the inside of the pepper with olive oil

  • Shred 2 mozzarella string cheese sticks per pepper

  • Completely fill each pepper with the shredded cheese

  • Set aside to then make the Pico de Gallo

Pico de Gallo Method:​

  • Prepare all the Pico de Gallo ingredients chopped and diced as  described above in the ingredients list 

  • Place all into a medium size mixing bowl

  • Mix well

  • Cover and refrigerate until time to garnish the grilled peppers

Pepper Grilling Method:​

  • Preheat grill to approximately 400F

  • Char each side of the peppers about 15 mins total cook time

  • Peppers should be charred and soft and try not to let cheese ooze out

  • Plate and garnish generously with the Pico de Gallo
