Amazing cheesy mushroom risotto.  The perfect side dish for chicken or beef.
 

Ingredients:

  • 1 tbsp. olive oil

  • 2tbsp butter divided

  • 2tbsp shallots minced

  • 2+ cloves garlic minced

  • 1/2 cup mushrooms your choice finely chopped

  • 1/4 cup white wine

  • 1 cup Arborio rice

  • 3 cups warmed chicken stock

  • 3/4 cup Parmigiano Reggiano cheese shredded

  • Salt and pepper to taste throughout the cooking process

Method:

  • Place medium sided pan on medium heat

  • Add olive oil and butter

  • Add shallots and garlic when the oil will make them bubble a bit

  • Cook until fragrant and translucent

  • Add the wine to deglaze or clean up bottom of pan

  • Add mushrooms and if most of moisture absorbed add a bit more butter

  • Add the rice and toss in mixture to fully coat and mix

  • Add a ladleful at a time of warmed stock stir

  • Lots of stirring...add another ladleful when you can see the bottom of the pan for more than a second while stirring

  • Continue the process and season and taste along the way till the al dente then add the cheese and mix well. 

  • Garnished with parsley or green onions
