Amazing cheesy mushroom risotto. The perfect side dish for chicken or beef.
Ingredients:

1 tbsp. olive oil

2tbsp butter divided
-
2tbsp shallots minced
-
2+ cloves garlic minced
-
1/2 cup mushrooms your choice finely chopped

1/4 cup white wine
-
1 cup Arborio rice
-
3 cups warmed chicken stock
-
3/4 cup Parmigiano Reggiano cheese shredded

Salt and pepper to taste throughout the cooking process

Method:

Place medium sided pan on medium heat

Add olive oil and butter
-
Add shallots and garlic when the oil will make them bubble a bit

Cook until fragrant and translucent
-
Add the wine to deglaze or clean up bottom of pan

Add mushrooms and if most of moisture absorbed add a bit more butter
-
Add the rice and toss in mixture to fully coat and mix

Add a ladleful at a time of warmed stock stir
-
Lots of stirring...add another ladleful when you can see the bottom of the pan for more than a second while stirring

Continue the process and season and taste along the way till the al dente then add the cheese and mix well.

Garnished with parsley or green onions
