Ingredients:

4 ears of sweet corn on the cob

3/4 cup cilantro finely chopped

1/2 cup grated cotija or parmesan or pecorino romano cheese

1/4 cup sour cream
-
1/4 cup mayonnaise
-
1 tsp lime zest
-
1/2 tsp chile powder
Corn prep:

1 tbsp olive oil
-
1/2 tbsp cold butter
-
Pinch of salt and pepper
Method:

Place all ingredients into a medium size mixing bowl

Mix and blend until ingredients well incorporated

Cover place in refrigerator until corn is grilled
Corn prep:​

Rub cold butter all over the ears of corn

Rub olive oil lightly all over the ears of corn

Add a pinch of salt and pepper to the ears of corn
Grilling:​

On a very hot grill, cook the corn until lightly charred on all sides
Serving:​

Using a pastry brush, generously coat the charred corn with the mixture on all sides

Garnish with cilantro or parsley
