Ingredients:

2 lbs ground beef

1 cup diced onion

1/2 cup diced red pepper

1/3 cup diced celery (about 1 stalk)

1/3 cup diced carrot (about 1 med carrot)

1/3 cup diced mushrooms
-
1 tbsp minced garlic
-
1 tbsp worcestershire sauce
-
1 tbsp dijon mustard
-
1 tsp oregano
-
1 tsp basil
-
1/2 tsp cayenne pepper
-
1/2 tsp salt
-
1/2 tsp pepper
-
1 egg
-
1 cup breadcrumbs
-
2/3 cup stout beer or lager
-
1 tbsp olive oil
-
1 tbsp bbq sauce
-
1 tbsp ketchup

Method:
Vegetable prep

Heat skillet over medium high heat

Add olive oil
-
Add the garlic, onions, celery, carrots and red pepper
-
Reduce heat to medium and saute for 5 minutes
-
Add the mushrooms and saute another 3 minutes
-
Set aside in a separate bowl
Assemble the meatloaf​
-
Put the 2lbs of ground beef into a large mixing bowl
-
Wait to mix until all ingredients added
-
Add the sauteed vegetables
-
Add the oregano, basil, cayenne,salt and pepper
-
Add the worcestershire, dijon, beer, breadcrumbs
-
Add the egg
-
Gently mix and fold all the ingredients together by hand until well incorporated​

Preheat oven to 400F

Lightly grease baking dish or muffin tin

Muffin Tin Method:

Take a handful of the loaf mixture and gently form it into a baseball size ball. it should just fit and not necessarily touch the bottom of the tin

Glaze (optional) mix 1 tbsp of bbq sauce and 1 tbsp ketchup then lightly spread over the top just before putting in the oven

Bake 25-30 minutes top should be golden brown and the internal temperature is 160F

Serve, refrigerate or freeze. Great make ahead personal sized portions
Meatloaf Tin Method:

Take large handfuls of the loaf and gently fill the tin making sure it has filled all the space but don't press down hard
-
Glaze (optional) mix 1 tbsp of bbq sauce and 1 tbsp ketchup then lightly spread over the entire top just before putting into the oven

Bake 40-45 minutes top should be nicely browned and internal temperature is 160F
Casserole Dish Method:

Take the loaf and place into the dish
-
Form the loaf with your hands into a rectangle approximately 9 inches long by 3 inches tall
-
Glaze (optional) mix 1 tbsp of bbq sauce and 1 tbsp ketchup then lightly spread over the entire top just before putting into the oven

Bake 40-45 minutes top should be nicely browned and internal temperature is 160F
