Ingredients:

Makes 4 portions

  • 1 pound 80/20 ground beef

  • 4 eggs

  • 2 cups or more cold cooked rice

  • 3/4 cup beef stock

  • 1/2 cup cream (not used in video)

  • 2 tbsp chopped mushrooms, your choice

  • 2 tbsp onion sliced

  • 1 tbsp onion minced

  • 1 tbsp cornstarch or flour if needed to thicken gravy

  • 3 cloves garlic

  • 1.5 tbsp vegetable oil

  • 1.5-2 tbsp minced Portuguese sausage or Chorizo

  • 1 tbsp butter

  • Salt and pepper to taste

Method:

​Burger, Gravy, fried rice, egg

Burger:

  • 1 pound of ground beef makes 4 uncooked 1/4 pound patties 4 inch by 1 inch for best results

  • Season with salt and pepper and chill in refrigerator 15 mins

  • Heat skillet medium high heat until a drop of water evaporates in 3-5 seconds

  • Place a thumb print into center of each burger 

  • Cook 4.5 minutes per side for medium rare 

  • set aside to rest

Gravy:​

  • Remove excess fat from skillet

  • cook mushrooms and onions until slightly browned

  • Season with salt and pepper

  • Add beef stock and simmer to reduce to a gravy

  • Add cream and blend well

  • Cook on low heat until reduced to a gravy

  • Add cornstarch or flour to thicken if necessary, this will also reduce the cooking time

  • reduce/thicken until running your finger across the back of a spoon and gravy does not cross the line

Fried Rice:

  • Cook the sausage until almost crisp

  • Add the garlic and onions

  • Add the vegetable oil

  • Cooks quickly until fragrant starting to brown

  • Add the rice and stir fry/mix well 

  • Cook until rice is dry and no oil remains in the wok or skillet

Fried egg:​

  • Add 1/4 tbsp of butter to a heated skillet

  • Crack 1 egg into a bowl then when butter melted pour gently into the skillet

  • Repeat process for each of the remaining eggs

Assemble to finish and serve the Loco Moco:

​On a warmed plate

  • Add 1/4 cup fried rice as the base

  • Place a cooked burger on top of the fried rice

  • Pour 1/4th of the gravy over the burger and fried rice

  • Place the fried egg on top

  • Garnish with parsley and serve
