Ingredients:

Yields 8-10 patties

  • 2 medium to large russet potatoes

  • 2 eggs

  • 1/2 cup grated onion

  • 1/2 cup panko bread crumbs

  • 1 tbsp chopped green onion for garnish

  • Salt and Pepper to taste

Filling options:​

  • 1/2 cup cooked bacon or your favorite cooked protein

  • 3/4 cup grated cheddar cheese or your favorite cheese

  • 1 tbsp of diced jalapeno or other pepper types, not used in this video

Method:​

  • Fill a large mixing bowl to half with cold water

  • Use a box grater to grate the potatoes into the water filled mixing bowl

  • Grate 1/2 cup of onion using a box grater and add to the potatoes in the bowl

  • Let mixture sit for 10 minutes to allowing the starch to settle out of the potatoes

  • Using a cheesecloth or kitchen towel, take one handful at a time and squeeze as much of the water out of the potatoes as possible

  • Place the dried potatoes into a separate mixing bowl

  • repeat until all the potatoes are in the mixing bowl

  • Slowly and carefully drain all the water from the first mixing bowl leaving behind the starch at the bottom of the bowl

  • Add the eggs and a pinch of salt and pepper to the starch bowl mix very well

  • Add the eggs to the potato filled bowl

  • Mix the egg mixture in well by hand or a fork

  • Add the Panko bread crumbs and mix well

  • Add the Cheese

  • Add the protein

  • Add you additional items if applicable to you

  • Mix well until all incorporated evenly

Method continued:

  • Fill an electric skillet or skillet with 1/2 inch of canola or vegetable oil

  • Heat electric skillet to 350F or skillet to medium high 

  • Take a handful of the potato mixture and form by hand into a 4 inch patty

  • Lay the patty away from you into the oil

  • Without a thermometer at 350F the patty should sizzle and bubble a bit when the temperature is right

  • Cook each side until golden brown approximately 3 minutes per side

  • Remove to a drying rack and season lightly but immediately with salt and pepper

  • Garnish with chopped green onion
