Ingredients:

  • 2 cups cut green beans

  • 2 medium onions

  • 2 cups warmed milk

  • 1 cup chopped mushrooms

  • 1/2 cup and 1/4 cup grated gruyere cheese divided

  • 1 egg yolk

  • 2.5 tbsp and 1 tbsp butter divided

  • 1/4 cup and 2.5 tbsp flour divided

  • 2 tbsp and 1 tbsp panko crumbs divided

  • 1 tsp olive oil

  • 1 tsp garlic powder

  • 1 tsp salt and 1/4 tsp salt divided

  • 1/4 tsp pepper

  • Pinch of nutmeg

  • Pinch of cayenne pepper

Method:

Beans

  • Wash and trim ends of beans â€‹

  • Cut beans to desired length 

  • Bring 5 cups salted water to a boil

  • Cook beans for 5 mins 

  • Drain and set beans aside​

Crispy Onions​

Assemble mis en place:

2 medium onions

2 tbsp panko bread crumbs

1/4 cup flour

1 tsp olive oil

1 tsp garlic powder

1 tsp salt

  • Cut onions in half and slice into half rings

  • Break cut onion by hand into individual slices

  • Place into mixing bowl

  • toss/coat onions with olive oil

  •  In a separate large mixing bowl add and mix well the flour, panko, garlic, salt

  • Add the onions to the large bowl and coat the onions with the dry mixture

  • Pre heat oven to 450F or Air Fryer to 400F

  • For oven spray baking sheet with nonstick spray

  • Place onions on tray or air fryer

  • Oven method, use tongs and toss onions frequently till nicely browned and a bit crispy about 30 mins

  • Air Fryer set timer to 12 mins and midway toss the onions and continue cooking additional 6 mins or until nicely browned

  • Set aside

Method Continued:

Mushrooms

  • rough chop 1 cup mushrooms

  • Heat skillet to medium heat 

  • add 1 tbsp butter

  • sautee mushrooms until browned about 5 mins

  • set aside

Mornay Sauce​

Assemble mis en place:

2 cups warmed milk

2.5 tbsp flour

2.5 tbsp butter

1 egg yolk

1/2 cup grated gruyere cheese

1/4 tsp salt

1/4 tsp pepper

pinch of nutmeg

pinch of cayenne pepper

  • Medium pot over medium high heat

  • Melt butter

  • Gradually add the flour whisk and blend 

  • Allow to bubble but not brown (turn down heat if needed)

  • Cook until flour taste and sandy texture is gone, about 5 mins

  • Gradually add and whisk in the milk.  mixture will begin to clump

  • Continue adding milk and whisking until no lumps and creamy texture 

  • Add the spices and whisk in

  • Add the egg yolk and whisk in

  • Add the cheese and whisk in until well blended and cheese melted

Method Continued:

Assemble

  • Add the Mushrooms to the Mornay sauce pot

  • Add all but a handful of onions to the Mornay sauce pot

  • Mix well

  • Add cooked beans to a large casserole dish

  • Pour the mornay sauce and mix the beans well into the sauce

  • Preheat oven to 375F

Topping​

Handful of crispy onions

1/2 tbsp panko crumbs

1/2 tbsp grated gruyere cheese

pinch salt

pinch pepper

  • Mix well

  • Sprinkle all over top of casserole

Bake uncovered for 30 minutes or until cheese slightly browned​
