Ingredients:

6 Muffin Tin Frittatas

  • 1 cup beaten eggs (3-4 eggs)

  • 1 tbsp cream or water

  • 1/4 cup grated cheese

  • 1/4 cup cooked bacon or other protein

  • 1/4 cup minced onion or shallot

  • 1/4 cup each of sliced cherry tomatoes, mushrooms, or vegetables of your choice, limit 4

10 inch Skillet Frittatas

  • 6 beaten eggs

  • 2 tbsp cream or water

  • 1/2 cup grated cheese

  • 1/2 cup cooked protein 

  • 1/2 cup minced onion or shallot

  • 1/2 cup each tomatoes, mushrooms, green onions, and other vegetables

  • of your choice, limit 4

Method:

​Muffin Tin

  • Cook any raw protein, mince and set aside

  • Pre heat oven to 350F

  • Beat eggs with the tbsp of cream or water in a bowl and set aside

  • Lightly grease the muffin tin

  • fill each cup halfway with the beaten eggs  

  • Season each with a pinch of salt and pepper

  • Add equal amounts of protein and vegetable and cheese to each cup

  • Bake 15-20 mins until slightly golden brown top

Skillet​

  • Cook any raw protein, mince and set aside

  • Pre heat oven to 350F

  • Beat eggs with 2 tbsp cream or water and set aside

  • Lightly grease skillet if cast iron or not non-stick

  • Fill skillet with the beaten eggs

  • Season with 1/4 tsp salt and pepper each

  • Add the protein and vegetables equally around the skillet

  • Bake 20-25 minutes until top is slightly golden brown
