Inspired from my time in Minnesota and Wisconsin. My inspiration came from many layovers in Milwaukee where my goal was to sample as many recipes as possible and ask questions. These are awesome!
Ingredients:

8-16 oz cheeses curds keep refrigerated

1 cup all purpose flour

1 tsp baking powder

1tsp salt
-
3/4 cup beer
-
1/4 cup buttermilk

2 eggs
-
2 cups corn or vegetable oil
Method:

Place the refrigerating cheese curds into the freezer, for a minimum of 30 mins prior to frying, longer is better

In a large mixing bowl add and mix the dry ingredients well

Mix the eggs in a separate bowl

Add all the wet ingredients to the dry ingredients in the mixing bowl and mix well

Heat the oil to 375F using a candy thermometer. watching and maintaining as close to 375F is key to being successful

Place the cheese curds from the freezer into the batter, let sit for 5 minutes

Using a slotted spoon pick up a few cheese curds and let as much of the loose batter as possible return to the batter bowl.

Add the curds to the oil and fry until golden brown approximately 1-2mins

Remove to a drying rack and serve right away
