One of my favorite childhood dishes we had while living in Great Britain. Shephard's Pie is made with lamb and cottage pie is made with ground beef. Use the same "Method"

Ingredients:
"The Mince"

1 pound ground beef
-
1/2 cup grated onion
-
1/2 cup frozen peas
-
1/2 cup grated carrot
-
1 cup beef or chicken stock
-
1/2 cup red wine
-
1 tbsp olive oil
-
1 tbsp tomato paste
-
2tbsp flour
-
2 garlic cloves shaved
-
1/2 tsp thyme
-
1/2 tsp rosemary
-
1/2 tsp paprika
-
1 tsp worcestershire sauce
-
Salt and pepper to taste
"The Mash"​
-
2 pounds russet potatoes peeled and quartered
-
3/4 cup grated parmesan cheese
-
1/2 cup cream
-
2 tbsp butter
-
1 tbsp butter melted set aside
-
1 egg yolk
-
salt to taste

Method:
"The Mince"
-
Heat large skillet medium high heat
-
Add the olive oil
-
Add the ground beef in small amounts
-
Brown the beef while continuing to break it up into a mince
-
As the beef begins to brown add the vegetables
-
Add the spices
-
When the beef is almost all browned make a well in the center of the pan and add the tomato paste
-
Allow the paste to cook for 2 minutes

Turn heat down to a simmer
-
Blend the tomato paste into the mixture
-
Add the wine and deglaze the pan and simmer for 2 minutes
-
Add the flour and mix well
-
Add the stock and simmer until the mixture is thickened to where you see the bottom of the pan as you run a spatula down the middle about 30 mins

Add the entire mixture to a lightly greased casserole dish
-
Use a spatula to make the mixture evenly distributed and flat

Method cont.:
"The Mash"​

Fill a large pot with water and add 1 tbsp of salt
-
Cut the potatoes into equal size quarters
-
Add potatoes to the water and turn the heat to high bring to a boil
-
Reduce heat to simmer and continue to cook until a fork passes easily in and out of a potato
-
Drain water and add potatoes to a large mixing bowl
-
Add the 1/2 of the cream
-
Add the egg yolk
-
Mash the potatoes
-
Add more cream as necessary to get desired consistency. May have some left over
-
Add the cheese and blend well into the potatoes
-
Preheat the oven to 375F
-
Add a large spoonful at a time of the mash to the top of the meat "mince" mixture
-
Use a fork to evenly distribute the mash over the top.

Use the for tines to make lines and make several twists to create little tips that pop up
-
Gently brush the melted butter over the top and sprinkle a bit more cheese on top
-
Bake approximately 30 minutes or until golden brown top
