Ingredients:​
Marinade:

2 bay leaves (can substitute each with 1/4 tsp of oregano or thyme)

2 tbsp brown sugar
-
1.5 tbsp pepper
-
1 tsp minced garlic
-
1/3 cup apple cider vinegar (can substitute with white vinegar)

1/3 cup soy sauce
Additional Ingredients:​

4 bone in skin on chicken thighs
-
1/2 medium onion rough chop
-
2-4 garlic cloves minced
Method:

Add all ingredients to a sealable container or ziploc bag

Add 4 bone in, skin on, chicken thighs
-
Seal and refrigerate 2 hours to overnight

Chicken Method:

Strain the chicken and reserve the marinade

Heat skillet to medium high heat with 2 tsp olive oil
-
Place chicken skin side down and lay away from you
-
Brown chicken on both sides
-
Remove chicken from skillet set aside to rest

Remove excess oil from skillet
-
Return skillet to stove and cook onions and garlic for 2 minutes

Deglaze the skillet with the marinade

Add chicken back to skillet skin side up this time and simmer for 30 minutes or until chicken shreds easily with a fork
