Ingredients:​

Marinade:

  • 2 bay leaves (can substitute each with 1/4 tsp of oregano or thyme)

  • 2 tbsp brown sugar

  • 1.5 tbsp pepper

  • 1 tsp minced garlic

  • 1/3 cup apple cider vinegar (can substitute with white vinegar)

  • 1/3 cup soy sauce

Additional Ingredients:​

  • 4 bone in skin on chicken thighs

  • 1/2 medium onion rough chop

  • 2-4 garlic cloves minced

Method:

  • Add all ingredients to a sealable container or ziploc bag

  • Add 4 bone in, skin on, chicken thighs

  • Seal and refrigerate 2 hours to overnight

Chicken Method:

  • Strain the chicken and reserve the marinade

  • Heat skillet to medium high heat with 2 tsp olive oil

  • Place chicken skin side down and lay away from you

  • Brown chicken on both sides

  • Remove chicken from skillet set aside to rest

  • Remove excess oil from skillet

  • Return skillet to stove and cook onions and garlic for 2 minutes

  • Deglaze the skillet with the marinade

  • Add chicken back to skillet skin side up this time and simmer for 30 minutes or until chicken shreds easily with a fork

  • Once Shredded continue to simmer until sauce is Nape
