Ingredients:

3/4 lb ground beef

4 slices bacon I recommend rough chopping/ dicing (updated recipe)

2, 8oz cans of tomato sauce...yes they come in 8oz cans!

1 cup whole kernel corn
-
1 cup uncooked rice
-
1/2 cup onion minced
-
1/2 cup green pepper diced
-
6oz water
-
2 tsp salt
-
2 tsp pepper
-
1/4 cup shredded parmesan or cheddar optional (updated recipe)
Method:​

Use a Dutch oven or casserole dish

Preheat oven to 350F

Add all ingredients as listed one at a time and spread each ingredient to layer evenly:

Add the rice
-
Add the corn
-
Add salt and pepper, 1 tsp each

Add 1 8oz can of tomato sauce all over the layered ingredients

Fill the can halfway with water and drizzle all over the layered ingredients

Add the onion
-
Add the green pepper
-
Add the ground beef, breaking it into small pieces as you layer
-
Add salt and pepper, 1 tsp each
-
Add the second can, 8oz tomato sauce all over the layered ingredients

Fill the can to 1/4 with water and drizzle all over the layered ingredients

Cut the bacon slices in half and add or dice and layer all over (take it up a notch with the updated recipe!)

Cover and bake 1 hour at 350F if using a casserole dish cover with foil

Uncover and Bake an additional 15-20 mins. If taking it up a notch with the updated recipe, top with the grated parmesan or cheddar cheese, bake until cheese is slightly golden brown about 15-20 minutes
