Ingredients:

  • 3/4 lb ground beef

  • 4 slices bacon  I recommend rough chopping/ dicing (updated recipe)

  • 2, 8oz cans of tomato sauce...yes they come in 8oz cans!

  • 1 cup whole kernel corn

  • 1 cup uncooked rice

  • 1/2 cup onion minced

  • 1/2 cup green pepper diced

  • 6oz water

  • 2 tsp salt

  • 2 tsp pepper

  • 1/4 cup shredded parmesan or cheddar optional (updated recipe)

Method:​

  • Use a Dutch oven or casserole dish

  • Preheat oven to 350F

  • Add all ingredients as listed one at a time and spread each ingredient to layer evenly:

  • Add the rice 

  • Add the corn

  • Add salt and pepper, 1 tsp each

  • Add 1 8oz can of tomato sauce all over the layered ingredients

  • Fill the can halfway with water and drizzle all over the layered ingredients

  • Add the onion

  • Add the green pepper

  • Add the ground beef, breaking it into small pieces as you layer

  • Add salt and pepper, 1 tsp each

  • Add the second can, 8oz tomato sauce all over the layered ingredients

  • Fill the can to 1/4 with water and drizzle all over the layered ingredients

  • Cut the bacon slices in half and add or dice and layer all over (take it up a notch with the updated recipe!)

  • Cover and bake 1 hour at 350F if using a casserole dish cover with foil

  • Uncover and Bake an additional 15-20 mins. If taking it up a notch with the updated recipe, top with the grated parmesan or cheddar cheese, bake until cheese is slightly golden brown about 15-20 minutes

  • Serve
